Gluten Burgers
Ah ... Christmas break!!!! 2 1/2 weeks of no work at the office, an opportunity for me to putz around at home, try new recipes, take walks with the dog and generally just DO NOTHING when I feel like it!
A couple weeks ago I whipped up these gluten burgers - a recipe from the Silver Hills cookbook, The Best of Silver Hills published in 1996.
These are very easy to put together and fry up for a quick dinner, a meal prepared in under an hour. Here's the recipe:
Betty's Gluten Burgers
1 cup gluten flour
1 cup quick oats
1/4 cup yeast flakes
1/4 cup soy flour
1/4 cup wheat germ
1 tbsp chicken or beaf style seasoning
1 tsp thyme
1 tsp sage
1 medium onion finely diced
2 cloves garlic finely chopped
1 1/2 cups hot water
3 tbsp olive oil
1/4 cup soy sauce
1. Combine dry ingredients and thoroughly mix.
2. In a large bowl, mix onion, garlic, hot water, olive oil and soy sauce
3. Add dry ingredients to liquid. Mix well and let stand 3-5 minutes.
4. Form into burger-sized patties. Place in a lightly oiled or non-stick pan and fry both sides until brown.
Place burgers in a shallow casserole or baking pan. Add a gravy of your choice and bake until bubbly and heated through, about 25-30 minutes.

As you can see I prefer to use a good amount of oil!
