Chocolate Chip Oatmeal Cookies
I've made the same recipe for chocolate chip cookies for 35 years. They turn out different every time - why is that?! Anyway, I've recently modified it to include 1 cup of quick oats and I have to say I LOVE the texture.
Here's the recipe:
1 cup unsalted butter or margarine (PLEASE don't ever bake with salted butter!!!!!)
1 1/2 cups brown sugar (not Demerrara and not golden sugar - must be brown sugar)
Cream the above 2 ingredients in your stand mixer until very smooth. Then add:
2 large eggs one at a time beating well after each addition
1 tsp REAL vanilla extract
Then beat the $%!@#$% out of it!!!! :-) Let the mixer run for a good 5 minutes if not more on a medium-high speed.
In the meantime combine dry ingredients:
2 cups all-purpose flour
1 cup quick oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Dump the dry ingredients into the butter/egg mixture. Add:
1 package REAL chocolate chips (Chipits are best)
Then mix the dry ingredients and the chocolate chips into the butter/egg mixture until really well combined. You might need a little elbow grease here. At least I do.
Drop by tablespoonful (or teaspoon depending on what size you want to make them) onto a prepared baking sheet. Or, if you lucky enough to have a beautiful baking sheet like the one in the picture above ... you don't need to grease it at all. NO - NOTHING STICKS! Yay!
Bake at 375 for 9 minutes if using the convection setting on your oven. If you're using normal bake, turn temperature down to 350 and bake 9-11 minutes until they are beginning to get golden brown on the edges and they no longer look moist.
They should turn out like thus:
Today I used 1 1/2 packages of chocolate chips - as you can see, they are chock-full of chocolate chips! Yum!
My kids grew up on these cookies - they are yummy! Enjoy!
