Empty-the-fridge Roast
This happens about once a week - I have the time to make something for dinner from scratch, open the fridge and pantry and check out what needs to be consumed before it grows legs and walks out of the fridge! Today's scouting of the fridge & pantry resulted in this:
It has no name! This is pre-baked, by the way. It contains:
Cooked millet
Cooked cracked wheat
(These 2 were cooked together with a cube of vegetable broth and enough water to ... well ... cook it!)
Leftover cooked oatmeal from breakfast (probably about 1/2 cup)
Leftover low-fat feta cheese
1/2 a medium sweet potato, grated
1 package frozen chopped spinach cooked up with 1 large onion, chopped and cooked in water until spinach is thawed and onions are glassy
About 1 1/2 cups leftover baked beans (homemade, has a bit of hickory smoke flavour)
About 4 tbsp 6-pepper hummus (that'll give it some zip)
About 1/2 cup egg whites (didn't measure!)
About 1 tbsp cilantro flavouring (from the tube which you can buy at most grocery stores)
3/4 cup bread crumbs
About 1 cup gluten flour
It smells and looks delicious but I wondered how it would turn out given the variety and # of ingredients. I considered spreading some ketchup on top before baking but opted not to. I wanted something meaty-looking rather than RED. So here it is fresh out of the oven!

I probably will never be able to repeat this recipe but you get the idea - just experiment with what you have on hand!
